Millie's Cookies Style Cookie Recipe

I love Millie's cookies and up until a few months ago, we didn't have one in my town, so I had to buy loads when I went into Manchester and stock up (ha). That was until I found this recipe! It's my favourite recipe of all time and let me tell you, the cookies are delicious. Maybe even better than Millie's Cookies! This is a tried and tested recipe that I've used many, many times and they're so easy and quick to make. 

Ingredients

125g butter, softened
100g light brown soft sugar
100g caster sugar
1 egg 
1 tsp vanilla extract
225g self-raising flour
1 large bar of chocolate

Step One: Preheat the oven to gas mark 4 /180 degrees

Step Two: Cream the butter and both of the sugars in a mixing bowl


 Step Three: Once mixed together crack the egg add it to the mix, then add one tablespoon of Vanilla Extract. Then stir until it creates a thick paste.




Step Four: Sift in the flour and then you need to add the chocolate to the mix. You can use whatever type of chocolate bar you want, I chose this time to go for a standard Galaxy chocolate bar. Make sure when adding the chocolate pieces that you break the chocolate into very small pieces. Then mix the mixture together. At this point it may become hard for you to mix because it can become ridiculously thick, so I suggest adding a very small drop or two of water just to help you out abit. 



Step Five: Once you've got a thick mixture, it's time to get messy! You need to put your hands into the bowl and  bring the mixture together into a small ball. This ball can be as big or small as you want, really it's trial and error because the mixture expands in the oven. But try to keep the balls to walnut size to ensure that they don't get too big - plus then you get more cookies! Put these balls then onto a baking tray which you need to cover with tin-foil and oil. You can usually get 5 or 6 balls on a tray. 



Step Six: Pop your trays into the oven on gas mark 4 / 180 degrees. You should aim to keep the cookies in the oven for around 8 minutes, to get the squishy centre that Millie's Cookies are famous for. When you take these out of the oven you may think that the middle isn't ready and that it's still soft but that's fine, leave them on the side for a few minutes to cool and they will harden. The sides of the cookies should just be starting to go a golden brown colour and that's how you'll know that they are ready! After a minute or two then move the cookies onto cooling tray. 



Step Seven: Leave to cool down for another 5/10 minutes, and then feel free to scoff your face!! 

These cookies are so good, I've literally just eaten 4 whilst writing this post :D yum yum yum yum yum!

  14. oh my god, i want them!!
    i think i'm going to move into your house- vegetarian mexican food, lovely cookies- it's a done deal haha.
    really though, these do look friggin' amazing. i never stray from packet mix cookies and they never ever ever work even then. i do however, have a packet of cookies in my kitchen which i am now going to go and eat- all twelve of them :)
